Mom's Chicken Salad
~ 3 chicken breasts, cooked, cooled, and shredded
~ 1 1/4 cup mayonnaise
~ 1 tbsp apple cider vinegar
~ 2 tbsp onion, minced
~ 1 cup celery, chopped
~ 1/2 tsp sugar
~ Salt and pepper, to taste
Mix all ingredients together. Cool before serving. Serve on deli croissants.

Taco Bake
1 pound ground beef, cooked and drained
1 can cream of mushroom
1 can mild Ro*tel
1 can pinto beans, drained
2-3 cups shredded cheese
2-3 cups crushed Nacho Cheese Doritos
Layer ingredients in the above order. Bake at 350 degrees for about 35-40 minutes. Cover for the first 30-35 minutes (this keeps from layer from over browning). Let set for 10-15 minutes before serving. You can serve this as an entree or side dish.

This is one of my favorite recipes! My husband and I love chips and salsa. Enjoy!
2 cans Black Eyed Peas, drained and rinsed
2 cans Shoepeg White Corn
1/2 cup chopped fresh cilantro
1 bottle Zesty Italian dressing
1/2 jar of chopped jalapeƱos
2 whole red tomatoes, chopped
1 medium red onion, chopped
1 bundle green onions, chopped
Mixed all ingredients together. Cool before serving. Serve with
tortilla chips.
